In the opinion of a couple dictionaries I just checked (including, for example, https://www.wordnik.com/words/crisp vs https://www.wordnik.com/words/crunchy), "crunchy" is fundamentally about the propensity to make a certain sound, whereas "crisp" is fundamentally a question of texture.
